Breakfast Biscuit Cups

Simply created to make our mornings easier & more manageable!
Any ford driving Mamas here? I am! And I LOVE my car! Totally love it! Except my poor passengers...that side of the car hasn't had air conditioning since like...I got my car...? It's under warranty & truth be told I'm lazy & just don't want to give up my car & freedom for a week. My poor, poor passengers.

With that said, it's mid summer now & my passengers just can't take the heat anymore! This past week my little lady Ford found herself in the shop getting repaired, and I found myself with my husbands truck (woot woot) EXCEPT this meant that we only have one vehicle, so when Mama leaves for work my two little toddler turkeys have to be up & at 'em with me instead of the luxurious life of sleeping in & having Dad drop them off. MORNINGS HAVE BEEN ROUGH.

No one wants to wake up. No one wants breakfast until we're literally out of the door and promises of breakfast at school just aren't good enough for my picky palate princes. (Two boys that only like simple, easy, and mild flavor)

Today is Sunday & we've got another one car week ahead of us so Ryan & I needed to make a solid plan that would tame our mornings down a bit! We came up with these bomb little breakfast cups! We tried them on the kids today and guess what...?! THEY LIKE THEM!!! They're simple enough for them to enjoy but also have enough flavor for Ryan & I to enjoy them too! 

Make 'Em Any Way You Like!

Sausage Breakfast Biscuits

Bacon Breakfast Biscuits
Add whatever kind of topping you'd like. Whether it's bacon, sausage or BOTH!

Ingredients:

  • 7-8 Fresh Eggs
  • 1 (16.3 oz.) can of Pillsbury Rolls  (Honey Butter & Hawaiian = AMAZING!)
  • 1 (8 oz.) package Farmer John Maple Pork Links (cooked & crumbled) OR about 5 pieces of bacon (cooked & crumbled)
  • 1 cup grated Colby Jack Cheese

Instructions:

  • Preheat oven to 350 degrees
  • Grease your muffin pan - we are making 16 breakfast cups
  • Open your biscuits (I'll wait while you have a small panic attack...)
  • Good job! Now there's 8 BIG biscuits in here - peel them in half to create 16 thinner biscuits. Peel the way the flakes are not to create a half circle.
  • Spread them out a little bit & press them into muffin pan.
  • Sprinkle cheese in the bottom of each biscuit.
  • Place a scoop of scrambled eggs into each biscuit then top with  bacon or sausage.
  • Add another sprinkle of cheese over each biscuit & place in the oven.
  • Cook for 10-14 minutes / Pull out & let cool for a minute or two

      * *If you are feeling extra adventurous try topping with gravy!** 
            (But please don't walk around with dripping gravy okay?!)
